A power washer is essential once you get into higher volumes. Liners are important too.

We are going to use 35 gallon totes for the restaurants. The plan is to give them 5 gall. buckets with compostable liners that they can place in the larger tote as needed. We are researching and testing compostable liners that are both compostable and strong enough to hold the weight while they are being transferred from back of the house prep stations to the 35 gal. tote. What would you recommend? Thx

I guess it depends on how many you have. I clean them during the pick up. A small roll of paper towels and a spray bottle of Melaleuca Sol-u-mel works well for me. The total amount of time at one location including: getting bucket, dumping it, cleaning it and returning it is roughly 4-6 minutes. I also line my buckets with a brown paper bag so it doesn't get as messy to clean and for me it's worth the cost ($.13 per bucket per pick up I think)
